然新年假期已經過了,但是馬上就又是周末了!如果閒閒沒事想要嘗鮮,不妨空出一個下午,和家人朋友一起自製正宗荷式可樂餅。手做的美味絕對是市售沒得比的喔!
荷式牛肉可樂餅

約可做 10 個
食材準備
內餡:500 克牛腰內肉(mager rundervlees 瘦肉)、60 克奶油、85 克中筋麵粉(patentbloem)、1/2 公升肉高湯、1 顆蛋黃、適量鹽與胡椒粉
外層裹粉:4 顆蛋白、1 包麵包粉、半碗麵粉(meel)、少許油
適量炸油
作法
1.    起鍋倒入肉高湯,加入牛肉小火燉煮 2.5 小時。完成後取出牛肉,切成小塊(近絲狀),肉高湯放涼備用。
2.    另起鍋,放入奶油以小火慢慢融化至水份去除(備註)。加入麵粉攪拌約1分鐘,再倒入冷却後的肉高湯繼續攪拌至均勻成糊。熄火,加入蛋黃與步驟1的肉塊,灑上適量胡椒粉與鹽調味後攪拌。
3.    將步驟2之內餡倒入方型盤上鋪平,蓋上保鮮膜放置冰箱2小時。
4.    冰箱取出內餡,切成條狀分 10 等份。手抹油,將條狀內餡塑形成條狀。而後分別依序裏上麵粉、蛋白與麵包粉(順序不能變),再次依序均勻裹上蛋白與麵包粉(兩層裹粉)。
5.     預熱油鍋至 180ºC ,下鍋油炸約 3 分鐘至金黃色即可取出。
備註
奶油成分中含有水、蛋白質與乳脂,加熱後這三種物質會分離,本食譜中以小火加熱至水份去除(蒸發),應該是為了留下純油脂,之後更適合高溫油炸。去除乳蛋白與水份的奶油稱為「澄清奶油」。讀者如有興趣,可參考如何自製澄清奶油

 

Dutch snacks- How to make Dutch beef croquettes (rundvleeskroketten)

Homemade croquettes taste just like heaven. Spending an afternoon in your kitchen is really worth it. Just roll up your sleeves and make some of this classic delicacy for you, your family and friends this weekend!

Dutch Beef Croquettes (Rundvleeskroketten)
About 10 Croquettes

Ingredients
For the filling (roux) –
Beef fillet (lean) 500g
Butter 60g
Plain flour 85g
Beef bouillon  5dl
1 egg yolk (approx. 20g)
Salt and pepper for seasoning
For the breading –
4 egg whites (approx. 120g)
Bread crumbs 200-300g
Oil for frying and some extra to grease your hands when forming the croquettes

Preparation
1.    In a saucepan add in the beef bouillon and beef fillets  and stew for 2.5 hours. Take the beef fillets out and thinly slice them. Leave the bouillion  to cool.
2.    To make the roux: In another saucepan melt the butter over low heat. Place in the flour and stir for about 1 minute. Pour in the cooled bouillon and stir constantly until the mixture is smooth and even without any chuncks. Turn off the heat and add in egg yolk and the beef slices. Season with pepper and salt.
3.    Pour the roux in a rectangular baking dish and spread it evenly. Cover with cling film and leave it cool in the fridge for 2 hours.
4.    Take the hardened roux out and divide into 10 portions. Grease your hands with some oil and then form each individual portion into a cyclinder-shaped croquette.
5.    Coat the croquettes with flour, egg whites and breadcrumbs, and once again with egg whites and breadcrumbs.
6.    In a frying machine or a deep heavy saucepan, heat the frying oil to about 180ºC. Fry the croquettes till they turn golden and crispy (about 3 minutes).
